Recipe Roundup – Paleo Breakfast

Breakfast is my favorite meal of the day.  I’m completely in love with eggs, which definitely helped me transition away from the grain-filled breakfasts of days past.  It also explains why 2 or 3 days a week I have breakfast for lunch or dinner as well.  I find that traditional breakfast foods are easy to prep, cook and get on the plate with very little time or difficulty.

Over the last couple of years I have several breakfast recipes that I come back to time and time again.  If you follow me on Instagram, you have definitely seen some of these before.

Here are my favorite grain-free, dairy-free, paleo breakfast recipes:

Easy Breakfast Casserole from PaleOMG – This breakfast casserole helped me survive the Whole30.  Having a casserole, sliced into servings in my fridge each week was the perfect way to start my day.  I ate this for breakfast almost every day of the program and it never got old.  Sometimes I play with the seasonings and switch out the breakfast sausage for chorizo to keep it interesting.


Crispy Waffles from Brittany Angell – No one does grain-free breads like Brittany Angell.  These waffles are crispy and perfect with a little drizzle of maple syrup.  My son asks for these all the time and I’m all too happy to make them.  Because they turn out so airy and crispy they even save well for a few days in the fridge.  Just toast them up in the oven or toaster over for a few minutes.


Crispy Eggs from Nom Nom Paleo – Crispy eggs are my hero.  Since I discovered this method of cooking fried eggs from Michelle Tam, it’s been my go-to quick meal any time of the day.  Take some leftover veggies or a handful of greens and top them with a crispy egg and you’ll have a completely balanced, delicious meal.


Chorizo Spinach Muffins from Naked Cuisine – These spicy, flavorful muffins are such a yummy twist on the typical egg muffin I’ve seen everywhere.

BLT Breakfast Salad from So…Let’s Hangout – I actually tried this before I went paleo and it was love at first bite.  The ingredients are a match made in heaven and the dressing is the perfect balance of flavors for this breakfast salad.  You can just as easily sub out the soft boiled eggs for fried eggs (or the Crispy Eggs above!) to make prepping this meal a little bit easier.

Grain-free Pancakes from Brittany Angell – After trying a few grain-free pancake recipes that were too dense, I decided to check with the lovely lady who created the Crispy Waffles mentioned above.  Brittany Angell has created the perfect grain-free pancake recipe.  You could make these for anyone and they would have no idea they were grain-free.

Paleo Granola from Lexi’s Clean Kitchen – Sometimes I crave a little crunch like I used to get from my favorite breakfast cereals.  This paleo granola is perfection.  Some of the others I’ve tried are mostly nuts and coconut, which can be a little heavy.  This recipe adds a variety of seeds to the mix that helps to keep this from being overly filling.  I like to enjoy this with some almond or cashew milk.
